Buffalo Wings & Blue Moon Sauce

A delicious recipe that is great to make for a large group of friends! Make the wings as spicy as you like depending on your spice-o-metre.

 

INGREDIENTS

•2kg three joint chicken wings
•2 tablespoons plain flour
•2 teaspoons paprika
•1/2 cup tomato sauce
•1/2 cup worcestershire sauce
•2 tablespoon sweet chilli sauce
•hot chilli sauce (to your liking)
•3 garlic cloves minced
•200g Hunter Belle Blue Moon Cheese
•1 cup sour cream
•1/2 cup good quality mayonnaise
•Oil to fry


 

METHOD

1. Cut the tip off each wing and discard. Cut wing in half through the joint, creating 1 mini drumstick and one mini wing. Combine flour and paprika and season well with salt and pepper. Toss through wings.

2. Heat oil in a large frypan over medium-high heat. In batches, fry wings for 2-3 minutes each side until light golden brown. Drain on paper towel.

3. Combine the tomato, worcestershire, chilli sauces and garlic. Toss the chicken wings through the marinade, cover and refrigerate overnight (if time permits).

4. Combine cheese, sour cream and mayonnaise in a food processor. If mixture is too thick mix with a touch of warm water or if it is too lumpy microwave for 15 seconds to make a smooth dipping sauce.

5. Preheat the oven to 180°C or the barbecue to medium-high. Cook the chicken wings for 15-20 minutes until cooked through. Serve with sauce and celery sticks if desired.

Tip: To make ahead, complete up to the end of step 3. Complete steps 4 & 5 when ready to serve.
